    25ml Ebbor.
    Sparkling water.
    Ice.

    Start with a tall glass and plenty of ice. Pour 25ml Ebbor, top with cold sparkling water and leave it for a moment before drinking.

    Tonic, or under Prosecco, if the table wants it.
