A Farmer's Instinct
Rich Counsell grew up on a farm beneath Ebbor Gorge in Somerset, surrounded by orchards, fields and hedgerows.
The gorge gives Ebbor its name. The farm remains its home.
Modern agriculture has achieved extraordinary productivity. But in pursuing yield, uniformity and efficiency, we have come to rely on a remarkably narrow range of crops, leaving much of the botanical world's diversity overlooked.
Modern wellness has taken a different path, often reducing plants to isolated extracts, standardised compounds and powders whose origins are difficult to trace.
Between these two approaches lies something extraordinary: the richness of plants themselves, their flavours, fragrances and naturally occurring chemistry.
From Wine to Plants
Before founding Ebbor, Rich worked in the fine-wine trade, where the same grape variety can produce profoundly different wines depending on where and how it is grown.
The great wine and Champagne houses have long understood that exceptional quality begins with the raw material. Every decision, from cultivation and harvest to preservation and composition, shapes the finished drink.
Their pursuit of quality is relentless, yet the botanical palette of wine is remarkably narrow.
What if we brought that same ambition to the thousands of other fruits, berries, flowers and herbs growing around the world?

Ebbor brings together farming, perfumery and plant science in pursuit of exceptional botanical drinks.
We seek out remarkable plants and harvests for their flavour, aroma and naturally occurring chemistry. Each ingredient is carefully preserved and composed, with two ambitions held equally: extraordinary taste and an exceptional diversity of plant compounds.
Every finished batch is analysed, with its measured chemistry recorded in a Plant Passport.
We are building Ebbor slowly and deliberately. Beginning on our farm in Somerset, and extending to exceptional growing landscapes around the world. Each new plant, harvest and relationship adds to our understanding of what is possible.
