    February is the quietest month on the Estate. Nothing flowers, so the composition is built downwards — into roots, barks and the last of the stored fruit.

    Taste

    Long and dry, with cocoa bitterness and cold citrus oil.

    Serve

    25ml over ice, topped with chilled still water.
