The Estate philosophy
The chemistry of a plant is shaped not only by its genetics, but by what its landscape asks of it — drought, heat, cold, altitude, rainfall, soil and light.
So we search for what extraordinary places can draw from a plant.
Across ten contrasting landscapes, we study exceptional local plants and familiar food plants grown under remarkable conditions, measuring how place changes their flavour, aroma and chemistry.

Somerset · England
Home Farm is the heart of Ebbor, but it isn't where we try to grow everything.
Somerset gives the Estate its structural heart: tannins, anthocyanins, organic acids and glycosides, grown and gathered across its orchards, hedgerows and meadows. The warmer landscapes extend the composition with terpene-led aromatics.
Our laboratory and production studio are here too. Harvests are stabilised close to their source, then brought to Somerset to be analysed, processed and composed.

What place does to plants
We don't try to make every landscape behave the same.
We are interested in the opposite: what happens when plants grow under Arctic light, Himalayan altitude, Mediterranean heat, desert drought or tropical rainfall.
Sometimes that means working with a plant that has grown there for generations. Sometimes it means growing a familiar food plant in unfamiliar conditions. In both cases, the question is the same:
What did the landscape change?
The evidence
Place alone isn't enough.
Our in-house laboratory compares cultivars, locations and harvest windows to discover where plants express exceptional flavour, aroma and natural compound profiles.
We follow that chemistry through preservation and production to understand what survives into the finished drink.
When a distinction is measurable, repeatable and beautiful to taste, we have a reason to stay.

We begin with a promising plant, a remarkable landscape and the people who know it best. Small harvests let us explore cultivars, growing sites and gathering windows.

Our in-house laboratory allows us to assess the plants and chemistry of a landscape over time. We use those results to decide where further investment is justified.

When the evidence and relationships are strong enough, we establish a new tiny farm as part of our Botanical Estate. This secures exceptional plants for our members and creates new income for the growers.
The search has begun
A search for what drought, heat, altitude, cold, rainfall and light can draw from a plant.
Our ten research landscapes have been chosen because they place plants under radically different growing conditions — from continuous Arctic summer light to Atacama drought, Himalayan altitude and tropical heat.
Within each, we search for the plants and cultivars that express something exceptional, then measure whether the difference is real.
These are landscapes under study, not farms already established within the Estate.

As harvests move around the world through the year, the Ebbor Studio selects from what has been grown, gathered and preserved to compose each monthly edition of the Botanical Year.
Some plants will return. Others may appear only once.
What connects them is why Ebbor chose them: plants shaped by extraordinary growing conditions, with chemistry we can measure and provenance we can follow.
What we discover and preserve becomes the next drink.
