The July edition bottle on a marble counter

    The composition

July is the most aromatic month we bottle. Resinous herbs dominate, and the extraction runs cooler and shorter to keep them from turning medicinal.

    Taste

    Warm and persistent, faintly saline.

    Serve

25ml over ice, topped with chilled still water.

    The plants

Meet the plants that shape August.

Every harvest is documented and assessed. We select leading plants for deeper analysis, particularly when a new cultivar, grower or harvest enters the Estate. After making, we analyse the finished edition again — so the amounts we publish describe what is present in your daily pour, not merely what was present in the field.
