The first composition drawn wholly from our own farm: elderflower cut in the hedgerow at dawn, early rhubarb and lemon for line. Picked and stabilised the same morning, a mile from the laboratory.

Gathered from unmanaged plum in high meadow, where the fruit stays small and the skins carry most of the colour. A short window: the trees gave three days.

A cultivar grown on a handful of terraces above the sea and picked by hand into crates. The whole fruit is used, pith and all, which is where the bitterness and the structure live.
