The place
The field boundary · Somerset
A British hedgerow is not planted to be harvested, which is part of its character. The estate's boundaries carry rosehip and elderberry within sight of the barn, and bilberry grows on the higher moor above. Everything is gathered by hand and carried the short distance to the barn, where delicate aromatics are handled without delay.

Sharp, concentrated, unmistakably northern.

Over ice, lengthened with sparkling water. Rosehip leads; bilberry gives the finish its edge.

The plants
Why these plants matter.

Rosehip
Bright, tart and sunlit; a clean red-fruit top.
Raw rosehip naturally contains vitamin C, carotenoids and flavonoids. Ebbor works with fruit gathered fully ripe, when colour and acidity are at their peak.
Gathered from the wilder edge of the field boundary and handled the same morning.

Elderberry
Dark and autumnal, almost black when ripe.
Raw elderberry naturally contains anthocyanins, flavonols and phenolic acids. Its colour sits almost entirely in the skin, so the fruit is picked fully black, never early.
Cut in bunches and stripped from the stem before pressing.

Bilberry
Sharp, concentrated, unmistakably northern.
Raw bilberry naturally contains anthocyanins in its inky skin. The small berries keep their acidity where a larger fruit would mellow.
Picked on the higher ground and brought down the same day.
Plant Passport
