Below Ebbor Gorge, a temperate patchwork of orchard, hedgerow and meadow gives the estate's damsons, quince and hedgerow hawthorn their depth of flavour. Ebbor began here because the short distance from harvest to the barn allows delicate aromas to be handled without delay.

Honeyed apple-and-pear perfume with a warm amber note.
Hawthorn
Soft hedgerow fruit and a gentle, drying finish.
Deep, tart, orchard-ripe. Damson skin, honeyed quince. Hedgerow hawthorn, gentle and drying.
How to pour it.
Over ice, lengthened with sparkling water. Damson comes first; quince carries the middle and hawthorn keeps the finish gentle.

The plants
Why these plants matter.

Damson
Deep damson skin, dark fruit and a clean tart spine.
An old orchard fruit left largely to hedgerows and field boundaries—small, deep-skinned and intensely tart where a plum is mild. Damsons carry their colour and much of their flavour in the skin, so we seek fruit fully ripe, when both are most expressive.

Quince
Honeyed apple-and-pear perfume with a warm amber note.
A fruit almost never eaten raw. Pressed, its pale flesh turns deep amber and gives a perfume of apple, pear and spice. Those aromatics are easily lost with delay, which is why the fruit is handled quickly.

Hawthorn
Soft hedgerow fruit and a gentle, drying finish.
The hedgerow tree of every English field boundary. Its berries have a mild, apple-like character and are gathered by hand from the hedgerow rather than grown in rows.
Plant Passport
Its Passport arrives with the edition.
Each edition is packaged in a protective pouch, labelled in your name and accompanied by a Plant Passport for that harvest.
A sealed pouch from each release is independently analysed after composition. The Passport records the plants, provenance and selected compounds measured in that release.
